Yes, you can trim from the nock end.
I recommend you go with A. You should not need an arrow stiffer than the 340 for that set up.
With the MFX brass insert I do not add the weight of the insert because it sits so far back inside the shaft that the front two inches hardly flexes, which acts like a shorter arrow than what it really is.
